The option to encrypt things on note-basis. A note would then be encrypted before syncing with the cloud (so its encrypted while in the cloud) - and then be decrypted when viewed on the phone (possibly after entering the decryption password).

It will break online editing, but it will offer people a way to store notes that are only accessible from their phone, if the note only has relevance there.
