Native Assimp supports PBR materials. Is Assimp.NET not up to date?

It depends on the format (and last I've heard, GLTF2 was the only thing that seriously did anything with PBR but I may be wrong). Anything can be stored in the assimp material since its key-value. While AssimpNet tries to keep up with all the material keys of the native library, if something is missing that doesn't mean you can't use that key.
Perhaps give more information? Also keep in mind AssimpNet targets the 4.1.0 release of the native library, so anything added after that would be missing.
