Updates needed to use dkist-processing-pac >= 2.0.0

Main changes are:

• Use new fit mode for improved accuracy

• Update kwargs to *-pac API calls

• Remove polcal dummy dimensions, which are no longer required by *-pac

• Renamed polarization_correction function to be very clear about exactly what math it does.
