Cannot add date in Structured Data Add-On

In the past, I have always done my JSON-LD by hand and then added it as Extra Header content. I purchased your add-on in the hope of making life simpler with pre-set templates. Your templates look very thorough.

I am unable to modify the fields. When I select a field, it highlights in yellow and I can input ONE character before the highlight goes away, and then I have to place and click the cursor to input another character. I may be missing something incredibly obvious, but I am experienced and I don't think I am. I'm attaching a video that I hope is small enough to upload.

Is there a manual somewhere for this add-on, or alternatively a video demonstrating use?
