Is there anyway to have a custom field be read on a transition, and based off what number (X) is input into said custom field to spawm X amount of subtasks?

Hi,
I'm not sure to have correctly understood your question, but at this moment the plugin doesn't allow to create task or subtasks with post-functions. That feature will be added in short (within this year). At this moment you can configure a validator in a transition in order to check that there is a number of subtasks that is equal to the value of a custom field. You can also require certain characteristics to that subtasks: issue type, status, priority, resolution, field value, etc.
To do it you should use Boolean condition with math, date-time or text-string terms. If you want more details on how to do it, please give me a more concrete example and I will explain you exactly how to implement it: name of custom field, subtasks issues type, status, ...
