Use variables for emails

Hardcoded in mailserver/bin/handle-incoming-mail.php The work I’m doing on sending mail from the website itself (which is what /var/www/fat/phtml/lib/fatmail.phtml pertains to) has moved this envelope sender address to an msmtp config file which I don’t think directly supports environment variables.
