Add CHANGELOG.md for 8.0.1, remove RELEASE, README_RELEASE and STATUS files

Add CHANGELOG.md for 8.0.1. (Note: this is hand-edited to include PRs that will go in as part of the release process).

Remove outdated information files. The information in these files is better tracked through bitbucket; keeping these files is confusing and makes the source code look unloved.
