Are you anticipating that in the near future it will be possible to load polygon shapefiles? The analysis of vegetation indices for an area is, for us in the study that we have in progress, very important, because we have verified that the forested areas of the Atlantic-Mediterranean zone drastically increase the density of vegetation after big fires, as shown in the attached graph, obtained from the EARTH MAP (the problem with EARTH MAP is that it only has one vegetation index available - NDVI !).

The final profile could be calculated by aggregating (mean, median, etc.) all values under the polygon.
