ScummVM and Dosbox Executable Path Override Options

LaunchBox currently uses versions of ScummVM and Dosbox that come packaged w/ updates to the software. It would be really useful to have an optional global path override for each so that custom versions can be used. Having a per-game override would be useful as well for testing different versions of Dosbox with a given game.

I’ve been marking the files in ThirdParty as readonly to prevent overwrites on updates as a kind of hacky “fix” in the meantime.
