I noticed that the UTF-7 as output generates an UnsupportedEncodingException. guess this is not limited to just the encoder. Is anyone still using UTF-7 these days?

Yes, UTF-7 is not supported by default. I've removed it from the default list. I've also added UTF-16LE.
