Update json-schema version

The version of json-schema that we are using is draft-07, but the latest version according to the website is 2020-12. We might want to update at some point. I’m not sure if the differences actually affect our schemas.

A concern is that the number of JSON schema libraries that support 2020-12 is small.

A conservative approach in the case where 2020-12 needs to be used could be that the eKYC-IDA WG maintains JSON schema files per JSON schema format version. For example, to maintain draft-07/verified_claims.json and 2020-12/verified_claims.json. But I’m not sure it’s worth doing it.
