Reduce test-specific Java code

I think we could make unit tests require less/no Java:

Example (using testdata/completion/leftParenInCompletableFunctionDef.lua):

-- Some options here, maybe? IDE settings, etc.
-- Input: '('
local Foo = {}
function Fo<caret>

An alternative input method, expanding on the caret tag:

-- Some options here, maybe? IDE settings, etc.
local Foo = {}
function Fo<caret input=')'>

This would make unit tests a lot easier to create and submit.

However, it'd probably be somewhat complex to create.

Thoughts? Perhaps this could be done more easily?
