Every time a player opens the popular portfolio, the entire server practically freezes, until all values are fetched by stocks

Stock information is always fetched on a different thread than the main thread. When I use spigot timings it doesn't take long. Use spigot timings to find out what is lagging your server. If it is my plugin create another issue and make sure the report is listed.
