Install macOS in specific partition instead of whole disk

The latest Catalina version 10.15.5 and the beta of Big Sur can live side-by-side in different partitions, as such it would be extremely useful to target a specific partition in a workflow instead of the whole volume.

since APFS has containers and an install multiple apfs containers, are you proposing a separate partition (as in a GPT partition)?
