It appears that sntp doesn’t exist on older versions of macOS Recovery. A couple relevant snips:

MacBookPro11,4
10.10.5 (14F27) - via Internet Recovery

/Volumes/mdsresources/run: line 113: sntp: command not found

May just need some version logic to use ntpdate for older versions of macOS Recovery
