Allow for enabling/disabling Roundcube

Hi,

I'd very much like it if, just like clamav, there'd be an option to disable roundcube.

I never use the webmail (only SMTP/IMAP with my own email clients), and don't want to open up the webserver to the outside world while it's still active either (mostly just for security reasons).

So currently, I'm unable to have the LetsEncrypt bot renew my certificate.

I've looked into using a custom script to disable it, and that would probably work, but if there were ever going to be an update released, I could run into the potential issue of breaking things. (I'm using the poste.io free docker container).

Please add something like

-e "DISABLE_ROUNDCUBE=true"

I like this idea especially for security reasons, since we do not use Roundcube either
