I think most of the requested functionality available right now:

1. Menu size calculated automatically, but configuration for underlying items is available - please see answers below.
2. All items can be moved or removed - just go to SelectionSK bookmarks folder and change the order of bookmarks. You can even create new folders (or remove existing ones). Plenty of pre-configured bookmarks are available on the support site: https://bitbucket.org/ashemetov/selectionsk/wiki/Bookmarks
3. Go to preferences\appearance and configure font size for menu or icon size for panel.
4. Go to preferences\appearance and configure panel for 5 rows.
