escapeQuotes in XML Filter not being reset

The option escapeQuotes (http://www.opentag.com/okapi/wiki/index.php?title=XML_Filter#escapeQuotes) in the XML Filter is not working when processing several files with different options.
The trigger to set the option in the XMLEncoder class is done only once for the first document, then all other document re-use it.
We need to reset the XMLEncoder object if the option changes.

This is caused because the EncoderManager does not reset the encoder if the MIME type is the same. This could possibly be dangerous in other cases than just this XML filter option.
